Nutritious Rice Recipe

Pep up your steamed rice with this light and fluffy rice with added nutrition & flavour from the coconut & cauliflower. Enjoy with your favourite curry or stir-fry.

 

 

Coconut & Cauliflower Rice

 

Vegan | Gluten-free

Serves 6

 

Take a small pot & measure:

1½ c (300 g) jasmine rice, rinse well in a sieve

3 c (750 ml) water

1 tsp salt

 

Put on the heat with the lid on & bring to the boil then reduce to a simmer. Give it a quick stir with a fork, replace the lid and when you can’t see the water, give it another quick stir with a fork. Now turn the pot off and remove from the heat. Keep the lid on and steam for 10 minutes. While it's steaming add:

1/4 of a cauliflower, finely chopped to resemble couscous

1/2 c desiccated coconut

 

Stir through well with a fork and replace the lid and continue to steam until ready to serve.
