It has been a bumper year for Passionfruit in Northland. These ugly beautiful fruits are tart but sweet & a wonderful tropical flavour to add to smoothies, ice cream, yoghurt & passionfruit curd. But in this recipe we are going for a savoury option... salad dressing! This simple salad lets the dressing shine through as it is the star of the dish. The creaminess of the avocado & sweetness of the peach work together perfectly with the tart passionfruit. Get in those last tastes of summer kiwis, as autumn is knocking on the door.
