Need some new ideas & inspiration for plant-based meals or how to make your vegetables more exciting? You are in the right place! The Veggie Tree Cook Schools are hands on, informative classes that cover a wide range of skills and cuisines along with foraging classes, plant medicine workshops and making your own non toxic home and self care products. The cook schools have been running here in Kaeo for eight years and I have had over a thousand people attend. I am a trained chef and have been a vegetarian for 32 years, I draw on many years of eating, cooking and researching a plant-based diet to bring you these classes. Kids Classes are from Ages 4-12, the other classes are suitable for ages 12 and up. Wild Mediterranean Mezze | Sunday 16th November 1-5pm
The Mediterranean sea has a wonderful array of cuisine to draw inspiration from all woven together by this beautiful body of water. I love to eat mezze style, little delicious tastes of a variety of foods, it is perfect for sharing. We will be heading out to the garden to do a little foraging for ingredients including picking our own vine leaves to make dolmades from scratch, we will also weave our foraged finds into Falafel, Spanakopita, Flatbreads, Tabbouleh, Char Grilled Zucchini and Dukkah dressed Hummus and to finish the most delicious sweet treat Baklava | $100 per person includes food and drink, recipe file, chef hints and tips | Vegan and Gluten-free friendly, please let me know on booking whether you require either of these options
Gluten-Free Bread, Pasta and Pastry Workshop | Sunday 30th November 2-5pm
Whether you are Coeliac or gluten-free, these made from scratch gluten-free staples are life changing and will bring so much joy back in to meal times. The bread is soft and great for sandwiches, even after a couple of days. The pasta is tasty and so satisfying and the pastry means you can make sweet and savoury pies to your hearts content, and all without a sore tummy to be felt! All of these gluten-free basics are made with whole foods, are totally delicious and there will be tasters and take homes | $90 per person includes food, drink, recipe file, hints, tips and take homes. Sourdough Bread and Plant Cheese | Sunday 7th December 3-5pm
Sourdough bread and plant cheese for the dairy free folks. In this class we will be mastering the art of sourdough bread and making my quick easy plant based cheese all from scratch. We will cover kneading techniques, trouble shooting potential problems, different flours used for bread making and why, plus making our own plant milk then turning it into your own everyday cheese that you will absolutely love | $80 per person Includes food, drink, recipe file, hints, tips with cheese and bread take homes. Please bring 1 x 500ml jar with a wide opening or similar for your take home starter and a tea towel or paper bag to take your bread home with you.

Natures Medicine Cabinet Workshop | Sunday 1st February 1-5pm
Humans have been using plants to enhance their health and treat illness for thousands of years. Utilising natures gifts to make remedies, tinctures, tonics, teas, oxymels, salves, feeding our bodies as well as our ails. In this workshop I will share my tried and true medicine cabinet staples. Together we will make elderberry syrup, immune boosting tonic, fire cider, wairakau (medicinal teas and infusions) for colds and flu along with my iron rich liver cleansing support oxymel, which makes the most of one of the most under rated weeds everyone has access to and last but not least a skin healing salve, bump balm or bone and tissue healing rub which is a must for every natural medicine cabinet | $100 per person includes take home remedies, recipe and information file, taste testers and drinks
Mexican Fiesta Class and Meal | Sunday 8th March 1-5pm
Hola, Join me for a margarita and learn to make homemade tortillas, mole jackfruit, the south American staple rice 'n' beans, jalapeno guacamole, Mexican inspired flame grilled dressed sweetcorn and hone your chargrilling skills with my chargrilled salsa. Quick Fire Ferments | Sunday 22nd March | 3-5pm
Fermenting is quick and easy once you've got the ground rules down. With a little guidance and a few top tips you will be fermenting up a storm in no time.
