Seedy Crackers

These seedy crackers are really easy & full of nutrients. We love nuts & seeds in our house & you know theres no nasties added to homemade crackers. They are great for the lunch box or a snack to keep you going in between meals. We had almond butter with our last batch of sweet ones, delicious!

SEEDY CRACKER RECIPE

~Recipe from The Veggie Tree Spring and Summer Cookbook~

Vegan | Gluten-free

Makes 30

Gather your ingredients and measure the following into a bowl:

½ cup each of chia seeds, sunflower seeds, pumpkin seeds

¼ cup each sesame, flaxseed (linseed), crushed hemp hearts

1 cup water

2 tablespoons Tamari or light soy sauce

1 garlic clove, crushed

Combine these all together and leave to sit for 5 – 10 minutes, until there is no pool of liquid at the bottom. Stir a few times in this time to help absorption. Meanwhile preheat oven to 150 deg C and line a tray with baking paper. Spread the seedy mix out onto the baking paper evenly with a spatular. I find if you want to get it really even place another sheet of baking paper over the mix once you have spread it out a bit then use a rolling pin to flatten evenly, then sprinkle over the top:

¼ tsp Himalayan pink salt

Bake for 30 minutes, take out of the oven & flip the whole lot over (use your other piece of baking paper used for rolling to flip onto). Remove the paper then slice into pieces with a pizza roller or knife, then bake for a further 30 minutes until dried out completely. Store in an air tight jar or tin.

For sweet ones:

First add to the bowl:

1 banana, mashed with a fork

Then:

¼ cup each chia seed, linseed, crushed hemp seeds, sesame & maple syrup

½ cup each sunflower, pumpkin seed, coconut thread

1 cup water

¼ tsp Himalayan pink salt

Follow instructions as above.
