This soothing and refreshing aloe citrus chia juice is just perfect for this time of the year when citrus fruits
are abundant and winter lurgy’s are about. The mucilaginous gel of aloe's insides is cooling and moistening, its anti-inflammatory properties soothe irritated mucous membranes, so is perfect for sore throats and a dry cough. Chia seeds are rich in protein, antioxidants, calcium and omega 3s and we get an awesome hit of vitamin C with all that freshly squeezed citrus juice.

You can use any combination of citrus fruits you have to hand to this aloe vera juice and adjust sweetener to suit your taste, this drink can also be made without aloe vera if you don’t have it. If you are still finding the aloe gel a bit bitter you can wash the gel itself after removing the skins and soak again before adding. Optional additions could be grated fresh ginger and/or turmeric, also mango juice is a delicious addition for the sweet toothed folks. The aloe skins are great for you hair and skin so rub that slimy goo onto you, for nourishing moisturising goodness.
Makes 1.4 L

3/4 to 1 cup aloe insides
1L water
1 1/2 cups citrus juice with zest for more punch
1/4 cup sugar, honey or preferred sweetener
1/4 cup chia seeds

If using fresh aloe vera soak the cut side in cold water for a minimum of 30 minutes before removing the skin. Remove the spines along the edge and remove the flat side of the skin by running a sharp knife along, parallel to the board, away from you, with a small amount of pressure. Peel this away and pop it skin side down on the board, using a spoon hold one end and run the spoon along to remove the gel thoroughly. Blitz the aloe insides, water, juice and sweetener until smooth, add the chia seeds to the jar or bottle you are store it in and pour the aloe citrus mix in, cap and shake vigorously and leave to allow the chia seeds to absorb for at least 1 hour, shaking after a couple of minutes to prevent clumping.
